What’s a lot more fun than scrambled eggs and bacon on a Saturday morning?

An Egg Bake!

I created my first egg bake when my Mom was in town Easter weekend. I woke up thinking I’d like to make breakfast for the family since they were in town visiting, but I was bored of the simple scrambled egg idea. I still wanted something quick and easy. After searching the fridge I saw we had some rye bread, eggs, a bunch of veggies, cheese etc. I thought “what if I put these into a bake”?

So we layered the rye bread, sliced tomato, slice onions, and cheddar cheese. Then poured over the scrambled eggs. 20 minutes in the oven and you have a tasty Breakfast Egg Bake.

My Mom wanted to contribute so she made some “flash” asparagus with her own oil vinaigrette for the side.

There are unlimited options with this idea of an egg bake. This morning I opted for a muffin pan version of the egg bake. Egg Bites!

For these I used french bread rolls (cut a small 1/4 an inch high circular piece for each egg bite). Then I placed the circular piece of bread in each muffin tin, added a slice of tomato, sprinkling of onions, and a piece of provolone. Then we poured the egg mix over (I use salt pepper, garlic powder, and some milk).

You can also layer cooked bacon, maybe some ham, or change-up the type of bread you place on the bottom. Once we tried everything bagel flats and they added a ton of flavor.

Easy Breakfast Egg Bake ¤

  • 8 x 8 glass cooking pan (sprayed with cooing spray)
  • 6-8 eggs
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1 tsp pepper
  • milk (1 teaspoon for each egg)
  • any type of bread (slice in 1/4 inch thick and cut to fit in one layer in the pan)
  • cheese of your choice
  • 1/2 an onion diced
  • tomato sliced
  • optional – cooked bacon, ham, turkey, etc.

Pre-heat the oven to 350°. In a mixing bowl crack the eggs then add the milk, salt, pepper, and garlic powder. Whisk for 2 minutes. In the glass pan layer the bread first, then the meat of your choice (optional), then the cheese, then tomato, then the onion. Pour the egg mixture over and stick in the oven for about 20 minutes.
