We’ve been eating great lately, so I must share some recipes with you!

Here are the dishes that kept me busy entertaining the past month.

These take some time, but they are well worth it. Unbeatable unique flavor

Apple Almond Chicken Salad with Homemade Mayo

Homemade mayo is the key here. So easy you won’t go back to Hellman’s

Baked Zucchini Fries with Marinara Dipping Sauce

Add 1/4 cup fresh grated parmesan to the breadcrumb mix, make a 1/2 portion of my marinara recipe here

Pinto Bean Salsa Salad

As a refreshing side for Insane Enchilada night

Tuna Ceviche

Chicken and Sweet Potato Thai Red Curry

My own recipe including sweet potatoes, chicken, onion, jalapeños, diced tomatoes, lime, and thai red chili paste

We’ve had a busy start to October and it is not looking to slow down. My 10 year High School reunion in Orlando, UM football games here in Miami, Peter’s Oma’s birthday in Ft Myers, going away dinner in South beach for a great friend, entertaining at our house, and now my Mom is about to come to town for 2 weeks when I return from a work trip to San Francisco.

 Loving the craziness though. Now if only we had some crisp weather to go with it all.
